Winemaking and Tasting Notes

The 2021 growing season saw cooler than ‘normal’ weather conditions which gave us the opportunity to push the Siwa vineyard maturity to its absolute full potential. 

We successfully harvested our Pinot Noir grapes later than any other season in recent memory. After being hand-picked from our ‘Fulford Rd’ block the batch was split in two; with 50% being whole bunch fermented, and the other half being traditionally destemmed. 

After fermentation, the wine was run to new and used French hogsheads where a natural malolactic fermentation occurred.
