A blend of Shiraz, Cabernet Sauvignon and Cabernet Franc, all from the Siwa vineyard at Kellybrook. This blend of red varieties offers good balance of fruit flavours, palate weight and structure. The fruit was hand picked, destemmed and sent directly to the press where they sat soaking for 3 hours, just enough time to pick up a light salmon colour prior to pressing. The juices were then run off to stainless tanks for cool fermentation with an aroma enhancing yeast, helping to keep the wine fresh and lively. The wine sat on yeast lees until it was bottled in August.
