Cabernet Sauvignon produced from fruit from the home vineyard (Siwa) in Wonga Park
The grapes were sourced entirely from the home vineyard (Siwa) in Wonga Park. There are multiple plantings of Cabernet Sauvignon on the vineyard, each block having unique characteristics.
The grapes were handpicked, and this single batch was destemmed into a small fermenter with daily pump overs.
After pressing, the wine was run to barrel for 9 months, with rack and returns conducted as necessary during this time. In early summer 2020, all barrels were carefully assessed and assembled where 50% was new French oak. The wine was bottled unfiltered in February 2020.
The appearance is a vivid ruby. On the nose, there are cassis, dark cherry, plum and mint notes. The oak shows through with vanillin and mahogany leading into pine needle and choc-mint aromas.
The palate is lively where wild red berry and cassis fruit tones are evident. Choc-mint and dried herb develop around the fruit notes to provide length and generosity. These characters intertwine with building powdery tannins to create complexity around a wonderful a cassis-driven finish.
This wine would match well with with roast beef, steak or thyme-roasted field mushrooms served over creamy warm polenta. .
Drink 2022 – 2037. Decanting recommended.
