Stonefruit and toasty oak with lime splice notes. Balanced, easy palate, creamy and textural.
This wine is a blend of 2 different vineyards spread from 2 distinct parts of the valley. These sites are our home vineyard in Wonga Park (66%) and Willowlake vineyard in Gladysdale (33%). Each vineyard offers different characters and flavours and the blend is often a wonderful synergy of the sum being greater than the parts. All batches are whole bunch pressed, fermented wild and matured in French oak (20% new) with 60% of the total blend undergoing a malolactic fermentation. We aim to give approachability to this wine, all the while respecting the flinty and citrus spectrums that we know and love about typical new-wave Yarra Valley Chardonnay.
The appearance is pale straw with green tinges.
The bouquet bursts with lime splice notes, green apple and lemon custard tart. Fleshy fruits of nectarine and peach with quince give layers of complexity. Flintyness alongside herbaceous notes of fresh dill and fennel are woven into the creamy, buttery tones.
The palate shows more citrus tones of fresh lime, Meyer lemon and grapefruit. Sweet and ripe fruit notes of honeydew and rockmelon are ever present with rich butterscotch tones around this, creating a multi-layered flavour delight. The creamy textural notes are enhanced by the subtle buttery tones woven with toasted almonds and sweet new French oak.
Drink this wine up to 5 years from vintage. It will be best served with pork tenderloin over a Dijon pan sauce, crispy roast vegetables and greens.
