TASTING NOTES
The appearance is a blushing pink. There are beautiful aromas of ruby grapefruit, white fig and just-ripe strawberry.
The palate is fresh and lively. The strawberry and cream notes come to the fore, with rhubarb, pomegranate and sage moving into some brioche tones as the mousse glides across the palate. The acid is very well balanced with the dosage to create a rounded and approachable wine worthy of a summer picnic or toasting in celebration.
WINEMAKING
This wine has been grown, made and bottled entirely at the Wonga Park property - a rare occurrence in modern Australian sparkling wine production.
The blend is composed of 85% Pinot Noir and 15% Chardonnay. The grapes were handpicked at perfect sparkling ripeness and a small amount of red Pinot Noir wine was blended before secondary fermentation to achieve some extra pink colour.
After secondary fermentation, the wine sat on the lees for 6 months. After this time, the wine was disgorged with a (sugar) dosage of 8g/L.
